In a nutshell: Scratches appear when a harder material rubs against a softer one. 585 gold and silver are soft and show fine abrasive marks after months; stainless steel and titanium remain smooth significantly longer. No jewelry metal is completely scratch-resistant; it just becomes visible more slowly or more quickly.

Hardness in Numbers
Hardness is often given in Vickers. Fine gold is around 25, 585 gold ranges from 120 to 180 depending on the alloy, and sterling silver is about 80. Jewelry-grade stainless steel reaches 180 to 220, titanium similar values, and tungsten carbide is much higher. Practically, this means a silver chain will show visibly more marks in the same amount of time than a stainless steel chain.

Where Coating Comes Into Play
For gold-plated pieces, the hardness of the coating matters, not the core. A PVD coating applied in a vacuum is harder than galvanic gold and resists scratches longer. Nevertheless, it remains thin. Fine abrasive marks on uncoated stainless steel, yes, with a polishing sponge or metal polishing paste. Deeper gouges will remain, as material would have to be removed for that. You should not polish gold-plated surfaces at all, as the gold layer is only a few micrometers thick and will disappear.
Is matte jewelry more resistant than polished?
In effect, yes. On a polished surface, every mark stands out because it refracts light differently. A brushed or sandblasted surface inherently has a texture in which new scratches optically blend in. The hardness of the material does not change, only the visibility.
