Silver reacts with hydrogen sulfide, which is found in the air, food, and sweat. This creates silver sulfide, a dark layer on the surface. Something similar happens with copper in an alloy, where it turns greenish. Stainless steel instead forms a very thin oxide layer of chromium, which is colorless and self-renews if damaged. That is exactly why a stainless steel chain stays bright.

Why do gold-colored chains get lighter anyway?

Here it is worth making a distinction that many shops omit. A gold-plated stainless steel chain does not tarnish, but the gold layer can rub off.
